Box free zone 15 minute meals (June 2 2009)

As a part of my own particular challenge I have put together a list of quick easy meals which only take 15 minutes to make. Hopefully this will stop me from automatically thinking of dial a dish/box at 6pm in the evenings.

Pasta puttanesca - favourite pasta cooked and served with a sauce made from sauted garlic, a finely diced onion, 1 can of tomatoes, a handful of black olives - I don’t bother de pipping as my kids won’t eat olives, a few anchovies and as much or as little dried chilli flakes as you like. Obviously I am feeding kids so I don’t use much.

Potato genovases - baby potatoes boiled, drained and tossed with pesto and cooked whole beans. Serve with crunchy bread.

Fried ciabatta sandwiches with mozzarella, basil and sliced tomatoes

Tofu burgers with satay sauce - Slice firm tofu and dust with your favourite seasoning (mine’s mediterranean spice) shallow fry until golden and crunchy. Serve in a burger bun with salad and satay sauce.

Of course, if I really get my act together I will pop the slow cooker on in the morning

Not much to add but would like to hear more about vegie meals in the slow cooker for my gal who is 36 weeks pregnant now.
We had Dim Sum in Northbridge on Saturday and then made chicken etc in sticky rice and then steamed in lotus leaves(which I left on a bench outside the museum causing DH to run back for them!). Do you ever make gluten “steaks” or minced gluten?

Oh slow cooker, how I love thee Mate, sometimes I whack the ingredients in mine the night before when I am cleaning the kitchen up. Stick the crock in the fridge and then put it on first thing in the morning.

Shouldn’t you always depip your olives anyway? Because unexpectedly biting down on a pip has been known to break the odd tooth here and there.

Ha! The thing that stopped my from ordering take-out was moving to the middle of nowhere, 20 miles from the nearest delivery place. Cured me right up

Oh brilliant idea - we’ve been guilty of too many boxed dinners lately - I think I’ll stick my own 15 minute meal list up on the wall.
