Apples Epples Ipples Opples Upples

They're everywhere!

I've discovered a place where I can get a 10kg box of apples for $2.  Yes they are 'seconds' but Oh my Goddess, the things you can do with a not so perfect apple!

I put the word out on the down to earth forum and was given the link to a recipe for apple butter made in the crock pot. 

Apple Butter Recipe from Lizzy Lane Farm



5 lbs. (enough to almost fill crock) peeled, cored, sliced
2 C. Sugar
1 ½ tsp. Ground cinnamon
½ tsp. Ground nutmeg
¼ tsp. Ground cloves
¼ tsp. Allspice
Pinch of finely ground sea salt
Olive Oil (I used rice bran oil)



•Coat crock pot with a coating of olive oil.

•Combine all spices & sugar.

•Fill crock with apples and spices, layering as you go.

•Cover crock and let sit at room temprature all day. (Crock pot turned off) Apples will exude juices.

•Add salt and stir.

•Cover crock and turn on low overnight.

•In the morning remove lid and let cook on high 2-8 hours until wooden spoon will stand up in the butter.

•With a blender, food processor or stick blender, puree butter. (I use a stick blender right in the crock pot.)

•Place into hot sterile jars leaving ¼” head space and seal
 
I left it cooking for the full 8 hours and the result was a thick lumpy caramelised delight that I left as that consistency.  Last night we had it warmed up over vanilla ice cream.  Trust me, there isn't a dessert which can surpass this one!  Lizzy Lane Farm, IOU a huge thankyou for sharing this recipe;  it's a keeper!

I made some apple butter last weekend (different recipe) and it was very sweet, tasted very good (all the sugar) the apple to sugar ratio is a lot less in the Lizzy Lane Farm recipe so I think I will give it a try. By the way what sort of crock pot did you use?

Pip it was a Sunbeam 5.5ltr crock pot :)

Where oh where did you get these apples? That's cheaper than the ones I got at the Canning Vale clearance markets. Those were seconds/cooking apples too but my kids still ate most of them, they just ate around/cut out the bigger bruises!
